Ingredients

  • 2 cups pancake mix (252g) any kind, I used Kodiak buttermilk
  • 1/2 tsp baking powder
  • 1.25 cups water (300g) or milk
  • 1 large egg can omit
  • 1/2 cup mini chocolate chips
  • Pancake syrup for serving

Instructions

    Cup of Yum
  1. Preheat the oven to 350℉.
  2. Add the pancake mix, baking powder, water and egg to a bowl and mix to combine.
  3. Fold in half of the chocolate.
  4. Spray 24 mini muffin cavities and add the pancake batter about 3/4 full.
  5. Top with the remaining chocolate chips. Bake for 8-10 minutes or until baked through.
  6. Let cool then serve with pancake syrup and enjoy!

Notes

  • To make gluten-free: use a gluten-free pancake mix
  • You can also use a regular muffin pan or 8x8 baking dish if you don't have a 24-count mini muffin pan. If using one of these, still bake at 350F but for about 15-20 minutes, or until baked through.
