Ingredients
- 2 cups pancake mix (252g) any kind, I used Kodiak buttermilk
- 1/2 tsp baking powder
- 1.25 cups water (300g) or milk
- 1 large egg can omit
- 1/2 cup mini chocolate chips
- Pancake syrup for serving
Instructions
- Preheat the oven to 350℉.
- Add the pancake mix, baking powder, water and egg to a bowl and mix to combine.
- Fold in half of the chocolate.
- Spray 24 mini muffin cavities and add the pancake batter about 3/4 full.
- Top with the remaining chocolate chips. Bake for 8-10 minutes or until baked through.
- Let cool then serve with pancake syrup and enjoy!

Notes
- To make gluten-free: use a gluten-free pancake mix
- You can also use a regular muffin pan or 8x8 baking dish if you don't have a 24-count mini muffin pan. If using one of these, still bake at 350F but for about 15-20 minutes, or until baked through.
