Ingredients
- 250 ml soy milk (1 cup)
- 2 Teaspoons apple cider vinegar (or lemon juice)
- 150 g vegan margarine (~½ cup + 2 tablespoons)
- ½ Teaspoon instant coffee granules (To enhance the chocolate flavour. Can be subbed for 1 teaspoon vanilla extract.)
- 250 g self-raising flour (~2 cups)
- ½ Teaspoon bicarbonate of soda
- 3 Tablespoons cocoa powder
- 180 g caster sugar (¾ cup)
For the frosting:
- 230 g icing sugar (~1+¾ cup)
- 2 Tablespoons cocoa powder
- 1 Tablespoon vegan margarine
- 3 Tablespoons soy milk
