Ingredients

  • 1 cup (4 oz) pecan halves
  • 1/2 cup mini chocolate chips
  • 2/3 cup light Karo® Syrup
  • 2 eggs
  • 2/3 cup sugar
  • 1 1/2 tablespoons butter melted
  • 3/4 teaspoon Spice Islands® Pure Vanilla Extract
  • Whipped Cream
  • crumbled graham crackers optional

Instructions

  1. Preheat the oven to 350ºF. Spray the interior of 8 (4 oz) glass canning jars with nonstick cooking spray. Divide the pecans evenly between the 8 jars. Top with 1 tablespoon of mini chocolate chips in each jar.
  2. In a bowl, or in a large liquid measuring cup, mix the corn syrup, eggs, sugar, butter and vanilla. Pour about 1/4 cup of the mixture over the pecans and chocolate in each jar. Place the jars on a baking sheet.
  3. Bake the pies in the center of the oven for 30 to 35 minutes. The pies are done when the centers reach 200ºF.
  4. Cool for 2 hours before serving.
  5. To serve, top each pie with a dollop of whipped cream and a sprinkle of crushed graham cracker.
