Mini Pancakes (Silver Dollar)

Ingredients

  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 4 teaspoons white sugar
  • 1 1/4 cups milk
  • 1 large egg
  • 4 tablespoons butter , melted

Instructions

  1. Sift the flour, baking powder, and salt in a large bowl. Stir in the sugar.
  2. Whisk the eggs, milk and melted butter in another bowl, then whisk into the flour mixture until smooth.
  3. Heat a pan or griddle on medium-low heat and coat with a small layer of butter.
  4. Using a tablespoon measure use about 3/4 of a tablespoon of batter (just scoop with the tablespoon measure but don't scrape out the entire amount, a quick pour will leave enough behind).
  5. Cook the pancakes on both sides until lightly browned, about 45 seconds on each side.
  6. Enjoy with your favorite toppings or mix-ins.
