Ingredients

  • ½ cup unsalted butter softened
  • 1 large egg
  • ¾ cup brown sugar packed
  • ½ cup creamy peanut butter
  • ¼ cup white sugar
  • 1 tbsp vanilla extract
  • 1 ½ cups flour
  • ½ tsp baking soda
  • ¼ tsp teaspoon salt
  • 1 ½ cups semi-sweet chocolate chips

  1. Preheat the oven to 350 degrees. Coat three mini muffin tins with cooking spray.
  2. Combine the softened butter, egg, brown sugar, peanut butter, white sugar, and vanilla extract in a bowl. Beat with a hand mixer until creamy and well combined.
  3. Combine the flour, baking soda, and salt in a bowl; mix well. Gradually add the flour mixture to the butter mixture until mixed.
  4. Add the chocolate chips and stir to combine. Scoop spoonfuls of the cookie dough into the mini muffin tin.
  5. Place into the oven and bake for 10-13 minutes or until lightly golden brown. Remove from the oven and let them cool. Enjoy.
