Ingredients

  • 1/2 cup butter softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 egg
  • 1 cup pumpkin
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
for the frosting-
  • 4 oz cream cheese softened
  • 5 tablespoons butter salted, softened
  • 1/2 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat oven to 325° F. Spray a mini loaf pan* and set aside.
  2. In a large bowl, using an electric hand mixer, cream butter, and sugar together until light and fluffy. Stir in eggs and vanilla extract.
  3. Scrape sides and stir in pumpkin. Mixture won't be smooth - it will look kind of curdled. This is totally normal.
  4. Slowly stir in the remaining ingredients until just combined. Scrape sides and mix again briefly.
  5. Divide batter evenly between pan sections and bake for 20-30 minutes or until the toothpick comes out clean after being inserted.
  6. Cool for 10 minutes before transferring to the cooling rack. Cool completely.
for the frosting-
  1. Whip cream cheese, butter, powdered sugar, vanilla extract, and cinnamon together until smooth and creamy. Scrape sides and whip again. Spread a good layer over each loaf, slice, and serve.
