Mini Turkey Meatloaf Muffins

Mini Turkey Meatloaf Muffins feature small, individual servings of ground turkey mixed with finely minced bell pepper and onion, oats, egg, and seasonings. Baked in a muffin pan and finished with a brush of BBQ sauce, they offer a tender yet structured texture and a flavorful bite-sized meatloaf variation. Ingredients

  • ½ cup bell pepper minced small, orange, red or yellow
  • ½ cup onion minced small, about 1/2 of a medium onion
  • 1 pound ground turkey
  • ½ cup old fashioned oats can also use quick oats
  • 1 large egg
  • 1 Teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoons granulated garlic powdered garlic also works, or add two fresh minced garlic clove.
  • 1 teaspoon soy sauce
  • ½ cup BBQ sauce use your favorite brand of sauce

Instructions

  1. Preheat oven to 375 degrees. Spray the muffin wells with oil or oil with a silicone brush.
  2. Mince dice and mince the bell pepper and onion into very small pieces. Use a food processor or hand chopper if you have one.
  3. In a large bowl add bell pepper, onion ground turkey, oats, egg, pepper, salt, garlic and soy sauce. Mix together with clean hands until just combined.
  4. With a quarter cup measuring cup, scoop the meat mixture into the holes of the muffin pan. Any remaining meat mixture split evenly between the mini meatloafs.
  5. Bake the meatloaf muffins for 30-35 minutes.
  6. With a silicone brush, baste the tops of the meatloaves with your favorite bbq sauce. Bake for an additional 5-10 minutes. When finished cooking, the meatloaf will register 165 degrees with a meat thermometer. If you don’t have a meat thermometer you can slice into one muffin, it should have no pink in the center. Enjoy!

Notes

  • Use a food chopper or finely mince bell pepper and onion to achieve smaller pieces and a more uniform texture.
  • Rinse and pat dry onion if you prefer a milder flavor; sweet onion can also be used.
  • Mix meat with your hands gently, adding a little oil on hands to keep the meatloaf tender and prevent overmixing.
  • Use a spatula to loosen any meatloaf that sticks to the muffin pan for intact servings.
