Mint Chocolate Cupcakes

Ingredients

Chocolate Cupcakes:
  • 1 cup flour
  • 1 cup sugar
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon instant espresso powder
  • 3/4 teaspoons baking soda
  • 1/4 teaspoon salt
  • 4 tablespoons unsalted butter , melted
  • 1/4 cup canola oil
  • 1/2 cup water
  • 1 large egg
  • 1/4 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 cup mint chocolate candies , chopped
Mint Buttercream Frosting:
  • 3 cups powdered sugar
  • 3/4 cups unsalted butter , softened
  • 1 teaspoon mint extract
  • 4-6 drops green food coloring
  • 1/4 cup whole milk , additional if necessary

Instructions

Chocolate Cupcakes:

  1. Preheat the oven to 350 degrees and line a 12 cup muffin tray with liner cups.
  2. Add to a stand mixer the flour, sugar, cocoa powder, espresso powder, baking soda, salt, melted butter, canola oil, water and turn on the beater until just combined.
  3. Add in the eggs until just combined, then add in the milk and vanilla beating until smooth.
  4. Stir in mint chocolate candies.
  5. Using an ice cream scoop fill the cups 2/3 full and bake for 20-22 minutes until a toothpick comes out clean.
  6. Cool completely.
Mint Buttercream Frosting:
  1. To your stand mixer add the powdered sugar, butter and mint extract on medium speed until light and fluffy then add in the milk 1 tablespoon at a time until the frosting can be spread easily with a spatula.
  2. Add in the color until it reaches the color green you like, one drop at a time while on medium speed.
