Ingredients

  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 to 2 teaspoons honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 English cucumber thinly sliced, large
  • 2/3 cup cherry tomato halved (optional
  • 1/3 cup red onion thinly sliced
  • 2/3 cup mint leaf chopped, fresh
  • 1/4 cup feta cheese crumbled

Instructions

  1. In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper. Adjust seasonings and sweetness as needed.
  2. In a large salad bowl, combine the sliced cucumber, cherry tomatoes, red onion, and chopped mint.
  3. Drizzle with dressing and sprinkle crumbled feta cheese over the top before serving.
