Mint Stuffed Oreos
These fudge-covered Mint Oreos have the perfect amount of chocolate and cool, peppermint flavor. The Oreos and peppermint patties are a terrific combination!

- 6 Oreo cookies original or double stuffed
- 6 York Miniature Peppermint Patties
- 1 cup semi-sweet mini chocolate chip cookies
- 1 teaspoons coconut oil
- ⅓ cup white chocolate chips
- 2 tablespoons chocolate jimmies
Instructions
- Prepare a small cookie sheet by lining with parchment paper.
- Gently twist 6 of the Oreos apart.
- Sandwich one peppermint patty in between the two halves of each Oreo.
- In a microwave safe dish, melt together the semisweet chocolate chips and the coconut oil.
- Once melted and smooth, use a fork to carefully dunk each of the Oreo York sandwiches into the chocolate. Gently tap the bottom of the fork holding the dipped cookie against the edge of the bowl to help the excess chocolate drip off, then place the cookie onto the prepared parchment lined cookie sheet.
- When all of the cookies have been dunked, let the cookies cool completely until hardened, either on the counter or in the fridge.
- Melt the white chocolate chips in the microwave then spoon into a piping bag fitted with a small open tip, or without a tip and just snip the end off.
- Pipe a drizzle of the white chocolate onto the top of each cookie, then sprinkle with the chocolate jimmies. Let harden before serving.

- Ensure that the chocolate is set before you add the white chocolate drizzle. If the cookies are warm, it will melt off the sides.
- After storing in the fridge, let these set at room temperature for a few minutes to come to room temperature. It makes them easier to eat.
- There’s not much holding the cookies together until the chocolate coating hardens, so be extra careful when dunking them into the melted chocolate.
