Miso Brussels Sprouts

The perfect balance of sweet and savory, these miso brussels sprouts are the best side dish! They are so delightfully crispy on the outside and tender on the inside. Even better, these garlicky miso brussels sprouts come together quickly and easily with only a handful of ingredients.

Ingredients

For the Brussels Sprouts
  • 1½ pounds Brussels sprouts cut in half
  • 4 cloves garlic roughly chopped
  • 2 tablespoons oil
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
For the Miso Sauce
  • 2 tablespoons White miso paste
  • 1 tablespoon rice vinegar
  • 2 tablespoons maple syrup

Instructions

  1. Heat the oven to 450F.
  2. Toss the brussels sprouts and roughly chopped garlic in the olive oil, onion powder, salt, and pepper.
  3. Place the brussels sprouts cut-side down onto a sheet pan and roast for 18 minutes.
  4. Meanwhile, combine the miso paste, rice vinegar, and maple syrup in a small bowl.
  5. Remove the sheet pan from the oven and push all the brussels sprouts into the middle of the pan and pour the miso mixture on top. Toss to combine.
  6. Roast for 5 more minutes or until the brussels sprouts are at your desired level of crispiness.
