Miso Mushrooms (with Soy Sauce)
This Miso Mushrooms recipe features cremini mushrooms cooked with a savory blend of miso paste, butter, garlic, soy sauce, and a touch of sweetness from honey and mirin. The method emphasizes caramelizing the mushrooms with the miso butter to develop a golden, umami-rich coating while keeping the mushrooms tender. Garnished with chives, this dish offers a balance of savory, sweet, and slightly tangy notes, making it a flavorful vegetable side or appetizer option.
Ingredients
Sauce
- 2 tablespoons miso paste low sodium
- 2 tablespoons butter softened, unsalted
- 5 garlic minced, cloves
- 2 teaspoons soy sauce low-sodium
- 2 teaspoons mirin
- 2 teaspoons honey
- 1 teaspoon rice vinegar
Ingredients
- 16 ounces cremini mushrooms
- 1/2 teaspoon salt
- few chives finely chopped, optional for garnish
Instructions
- In a mixing bowl, combine the sauce ingredients. Set aside.
- Heat a large pan on medium-high heat then add about 2 tablespoons of oil. Add mushrooms and season with salt to help them release more moisture. Cook for a couple of minutes, or until they just start to soften but are still firm in the middle.
- Pour in the miso butter and combine with the mushrooms. Allow them to sit untouched for a few minutes to brown and caramelize. You’ll know they’re done when the mushrooms are tender and they’re coated with golden bits of garlicky miso butter. Garnish with freshly chopped chives, then serve immediately and enjoy!
Notes
- Swap cremini mushrooms with button or thinly sliced king oyster mushrooms, making sure they are fresh and firm.
- Use low-sodium yellow miso paste for a mild flavor that blends well with butter and mushrooms.
- Cook mushrooms whole for fuller texture or halved for quicker cooking and more browning.
- Select mushrooms of similar size to achieve uniform cooking and texture.
- Monitor closely after adding miso butter to caramelize without burning the miso for best flavor.
