Widely used in Ethiopia, mitmita (ሚጥሚጣ) is an orange-red spice blend, mainly made from chilli, cloves, korarima, and salt.

Ingredients
- 20 dried bird's eye chilli peppers
- 2 tablespoons cumin seeds
- 10 green cardamom pods (seeds only)
- 1 tablespoon korarima seeds (Ethiopian cardamom)
- 1 tablespoon black peppercorns
- 1 tablespoon allspice berries
- 1 tablespoon ground ginger
- 2 teaspoons garlic powder
- 2 teaspoons whole cloves
- 1 small cinnamon stick
- 2 teaspoons coarse salt (preferably Ethiopian)
Equipment
- Heavy-bottomed pan
- Spice or coffee grinder
- Glass jar with hermetic seal
Instructions
- In a heavy-bottomed pan, roast the whole spices (cinnamon, seeds, and berries) and the dry chilli peppers over medium heat for 2-3 minutes, until the fragrance is released. Shake the pan frequently to prevent the mixture burning.
- Transfer to a bowl and let cool completely, stirring occasionally.
- Place the cooled mixture and all the other ingredients in a spice or coffee grinder, and reduce to a powder.
- Store in a glass jar with airtight closure, away from light and especially direct sunlight.
- Mitmita can be stored for several months.
