Mitmita

Widely used in Ethiopia, mitmita (ሚጥሚጣ) is an orange-red spice blend, mainly made from chilli, cloves, korarima, and salt.

Ingredients

  • 20 dried bird's eye chilli peppers
  • 2 tablespoons cumin seeds
  • 10 green cardamom pods (seeds only)
  • 1 tablespoon korarima seeds (Ethiopian cardamom)
  • 1 tablespoon black peppercorns
  • 1 tablespoon allspice berries
  • 1 tablespoon ground ginger
  • 2 teaspoons garlic powder
  • 2 teaspoons whole cloves
  • 1 small cinnamon stick
  • 2 teaspoons coarse salt (preferably Ethiopian)
Equipment
  • Heavy-bottomed pan
  • Spice or coffee grinder
  • Glass jar with hermetic seal

Instructions

  1. In a heavy-bottomed pan, roast the whole spices (cinnamon, seeds, and berries) and the dry chilli peppers over medium heat for 2-3 minutes, until the fragrance is released. Shake the pan frequently to prevent the mixture burning.
  2. Transfer to a bowl and let cool completely, stirring occasionally.
  3. Place the cooled mixture and all the other ingredients in a spice or coffee grinder, and reduce to a powder.
  4. Store in a glass jar with airtight closure, away from light and especially direct sunlight.
  5. Mitmita can be stored for several months.
