Mix Vegetable Raita |Mixed Raita
Mix Vegetable Raita is a classic Indian mixed raita made with yogurt, fresh raw vegetables, and mild spices. This flavorful and refreshing veg raita is a delicious accompaniment that pairs well with all curries, biryanis, pulaos, and parathas.
Ingredients
- 1 ½ cup yogurt
- 1 cucumber
- ½ carrot
- ¼ onion
- cilantro
- 1 teaspoon raita masala or cumin powder
- 1 teaspoon salt
- dried mint leaves
Instructions
Prepare the vegetables
- Wash all the vegetables thoroughly. Grate the cucumber and carrot. Finely chop the onion and cilantro.
Prepare the raita base
- Whisk the yogurt until smooth. Add salt and raita masala or cumin powder, then whisk again to combine.
Assembly
- Add all the prepared vegetables to the yogurt and stir well.
- Garnish with dried mint leaves. Serve chilled for the best flavor.
Notes
- Whisk the yogurt thoroughly before mixing in the vegetables.
- For extra heat, add red or green chilies.
- Adjust the amount of vegetables to your taste.
