Mixed Berry Crumb Bars

Ingredients

Crust and Crumb Topping:
  • 2¼ cups of flour
  • ¾ cup of white sugar
  • ¾ tsp baking powder
  • ¼ tsp salt
  • 12 tbsp cold unsalted butter diced
  • 1 egg
  • 1 egg yolk
  • 1 tsp pure vanilla extract
  • 1 tsp lemon zest divided
Mixed Berry Filling:
  • 3½ cups of fresh berries (strawberries, blackberries, blueberries, and raspberries) cleaned, hulled, and sliced if large
  • 6 tbsp white sugar
  • 3 tsp cornstarch

  1. Preheat oven to 375 degrees. Line a 9x9-inch baking pan with parchment, and spray it with coconut oil spray or cooking spray.
  2. Make the crust & crumb topping by whisk together the flour, sugar, baking powder, and salt.
  3. Beat in the butter, egg, egg yolk, vanilla, and half of the lemon zest with a hand mixer until the mixture is crumbly.
  4. Pour a little more than half of the mixture into the bottom of the prepared pan. Using your hand, firmly push down to evenly press the dough into the pan.
  5. Prepare the filling by combining the berries in a bowl with the sugar, cornstarch, and remaining lemon zest; mix until well combined.
  6. Pour the berry filling over the crust, then crumble the remaining dough over the top of the berries.
  7. Cook the berry crumb bars by placing them into the oven and bake for approximately 40 minutes, until the top is light golden brown.
  8. Cool completely on a wire rack, then remove from the baking pan and cut into squares. Enjoy.
