Ingredients
White Balsamic Vinaigrette:
- 2 tbsp canola oil
- 1 tbsp olive oil
- 2 tbsp white balsamic vinegar
- ½ tsp sugar
- salt to taste, sea salt and freshly cracked
- black pepper to taste, sea salt and freshly cracked
Salad:
- 4 cups mixed greens
- cherries sliced (pits & stems removed, several, Rainier variety
- 1 nectarine sliced, ripe
- 2 tbsp pomegranate seeds
- 2 tbsp feta cheese
Instructions
- Make the vinaigrette, by combining the olive oil, canola oil, white balsamic vinaigrette, sugar, sea salt, and freshly cracked pepper, to taste together in a small bowl. Whisk until well combined. Set aside.
- Make the salad by combining the mixed greens with sliced cherries, nectarines, pomegranate seeds, and feta cheese.
- Drizzle the salad with the well-whisked balsamic vinaigrette, to taste, and toss until well combined. Serve immediately. Enjoy.
