Mixed Greens with Roasted Tomatoes, Mozzarella Pearls, and Homemade Croutons

Ingredients

  • 2 tsp olive oil basil
  • 1 cup grape tomatoes
  • 1 clove garlic
  • salt to taste, sea salt and freshly cracked
  • black pepper to taste, sea salt and freshly cracked
  • 2 cups romaine lettuce
  • 2 cups mixed greens
  • 2 tbsp mozzarella pearls
  • croutons to taste (recipe link above)
  • 1 tbsp pine nuts toasted
  • vinaigrette recipe link above, brand: Frans

Instructions

  1. Prepare Fran's Simple Vinaigrette - see the recipe link above. Cover with a lid or saran wrap; set aside to allow flavors to mingle.
  2. Prepare the Garlic and Herb Homemade Croutons - see the recipe link above. Set aside to cool.
  3. Preheat the oven to 350 degrees. Coat a small baking dish with cooking spray.
  4. Place the grape tomatoes into the baking dish. Drizzle with olive oil, and minced garlic then season with sea salt, and fresh cracked pepper, to taste. Toss to coat the tomatoes evenly.
  5. Place into the oven and roast for 20-25 minutes. Remove from the oven and place them on a plate to cool.
  6. Place the romaine lettuce and mixed greens into a serving bowl. Top with the cooled roasted tomatoes, mozzarella pearls, homemade croutons, and toasted pinenuts. Drizzle with the vinaigrette, to taste; mix well until evenly coated. Serve immediately. Enjoy.
