Moist and Delicious Sour Cream Banana Bread

Ingredients
- ⅓ cup vegetable oil
- 1 cup granulated sugar
- 2 egg lightly beaten
- 1 ½ cups banana about 3 large overripe bananas, mashed
- 1 cup sour cream
- 1 ½ teaspoon vanilla extract
- 2 ½ cup flour
- 2 teaspoons baking soda
- ½ teaspoon salt
- 1 cup walnuts optional, chopped
Instructions
- Preheat the oven to 325 degrees Fahrenheit and spray two 9x5 bread pans with pan spray.
- In a large bowl, beat ⅓ cup vegetable oil and 1 cup granulated sugar together with a hand mixer until combined. Add in 2 eggs and beat until light and fluffy, about 2 minutes.
- Beat in 1 ½ cups mashed bananas, 1 cup sour cream, and 1 ½ teaspoon vanilla extract. Add in 2 ½ cup flour, 2 teaspoons baking soda, and ½ teaspoon salt. Mix on low until just combined. Stir in 1 cup chopped walnuts by hand, if desired.
- Separate the batter evenly into the two prepared pans and bake for 50-60 minutes or until a toothpick comes out clean. Let the loaves cool for 30 minutes before slicing.
