Moist Banana Bread

This super Moist Banana Bread is best banana bread you will ever make. The sour cream, very ripe mashed bananas, and Texas pecans make the difference.

Ingredients

  • 1/2 cup butter softened
  • 1 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup sour cream
  • 1/2 cup pecan pieces
  • 1 cup mashed bananas 2 - 3 very ripe bananas

  1. Preheat oven to 350 degrees F.
  2. Beat the softened butter and sugar together. Beat in the eggs one at a time. Add the vanilla and lemon juice and continue mixing. Fold in the sour cream and the mashed bananas.
  3. Add the flour, baking powder, baking soda and salt and stir until combined.
  4. Bake in a preheated oven at 350 degrees F (175 degrees C) for 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
  5. Cool the banana bread in the pan for 10 minutes before removing to a wire rack to cool completely.
