Mojito Fruit Salad
The Mojito Fruit Salad combines watermelon, strawberries, blueberries, and fresh mint with a lime juice and powdered sugar dressing, optionally enhanced with white rum. This refreshing blend features a balance of sweet and citrus flavors with a cooling mint accent, accented by the optional crunchy jicama stars added just before serving. Chilling the salad allows the flavors to meld well, making it a vibrant, colorful dish that works well as a light dessert or side during warm weather.
Ingredients
- 8 c. watermelon about 1" in size, cubed
- 4 c. strawberry hulled and quartered
- 3 c. blueberries
- 18 mint chopped, large leaves
- ½ c. lime juice fresh
- 4 T. powdered sugar
- 4 T. white rum optional
- jicama optional, cut as stars
Instructions
- Place fruit in a large bowl.
- In a small bowl, combine chopped mint, lime juice, and powdered sugar. With the back of a spoon, muddle the mint to release its flavor. Stir in rum, if desired.
- Drizzle mixture over fruit. Gently fold to combine. Then place in fridge to chill, and to let the fruit juices mingle. This can be made a few hours prior to serving. Just be sure to fold right before eating.
- To include jicama stars, cut jicama into 1/4" slices. Use a sharp star-shaped cutter to create stars. I used the smallest cutter in this set, about 1-3/4" in size. To preserve their whiteness, I wait to toss the stars into the salad until right before serving.
Notes
- Prepare the mint, lime juice, and sugar dressing by muddling to release fresh mint flavor before mixing with fruit.
- Add jicama stars just prior to serving to maintain their crisp texture and color.
- Chill the salad to allow flavors to meld and juices to combine for better taste.
