Mojito Jello Shots Recipe
These mojito jello shots with fresh raspberries and coconut rum are refreshing, tasty, and fun. They're perfect for summer pool parties, to take to the beach, or anytime you want a playful cocktail!

Ingredients
- ¾ ¾ cup raspberries fresh or frozen and thawed
- ¾ ¾ cup Malibu or other coconut flavoured rum
- ¼ ¼ cup water
- ¼ ¼ cup granulated sugar
- 5 5 teaspoons unflavored gelatin
- Mint leaves, shredded coconut and raspberries, to garnish
Instructions
- Put the raspberries into your blender and blend on high speed until pureed. Strain the raspberries through a fine-mesh sieve to remove the seeds.
- In a medium-sized bowl, mix the raspberry puree and rum.
- Add the water and sugar to a small pot over low heat. Once the sugar dissolves, add the gelatin and stir until it dissolves.
- Pour the gelatin water into the rum and raspberry mixture and mix well. Pour it into a small, shallow pan and then put the pan into your fridge for several hours, until the shots set.
- Cut it into squares or circles using a cookie cutter and garnish with shredded coconut and either a mint leaf or a raspberry
