Mongolian Beef Recipe

Mongolian Beef features thinly sliced sirloin steak marinated briefly in a soy sauce and cornstarch mix, then quickly stir-fried with garlic, ginger, and green onions. A savory sauce made of hoisin sauce, dry sherry, brown sugar, and sesame oil is added to coat the beef, creating a balance of sweet and salty flavors. The beef remains tender with slightly wilted green onions, making a flavorful dish best served over rice with sesame seeds for garnish.

Ingredients

  • 1/4 cup soy sauce reduced-sodium
  • 2 teaspoons cornstarch
  • 1 ½ pounds sirloin steak or a similar cut of beef, thinly sliced, petite, boneless
  • 1/4 cup hoisin sauce
  • 2 tablespoons dry sherry or rice wine
  • 2 tablespoons brown sugar packed
  • 2 green onions bunches
  • 2 tablespoons vegetable oil
  • 3 garlic minced, cloves
  • 1 tablespoon ginger minced
  • 1 teaspoon sesame oil

Instructions

  1. In a medium bowl, whisk soy sauce and cornstarch together.
  2. Add sliced beef to soy sauce mixture, and toss to coat.
  3. Set aside to rest for 10 minutes.
  4. Meanwhile, whisk hoisin sauce, sherry, and sugar together in a small bowl until combined. Set aside.
  5. Chop green onions into 1-inch pieces. Set aside.
  6. Heat the vegetable oil in a wok or a large skillet over medium-high heat.
  7. Add garlic, ginger, and beef with its sauce. Quickly toss to combine.
  8. Let the beef cook for 30 seconds without stirring. 
  9. Stir in green onions, and cook, stirring regularly, until they're just starting to wilt. 
  10. Pour the hoisin sauce mixture in along with the sesame oil, and cook until just thickened.
  11. I serve this over rice topped with a sprinkle of sesame seeds. 

Notes

  • Use reduced-sodium soy sauce to avoid overly salty flavors in the sauce.
  • Flank steak is a good alternative cut for tender results.
  • Gather and prep all ingredients before cooking as the recipe cooks quickly.
