Ingredients
- 1 cup creamy peanut butter
- 2 large eggs
- ¼ cup coconut sugar
- ¼ cup granulated sugar
- 2 teaspoons pure vanilla extract
- 1½ cups thick-cut old-fashioned rolled oats
- ½ teaspoon baking soda
- ½ teaspoon kosher salt
- ½ cup semisweet chocolate chips
- ½ cup M&M's candies
Instructions
- Preheat oven to 350°F. Line an 8x8-inch baking pan with parchment paper and set aside.
- In a medium bowl, using a hand mixer, beat the peanut butter and eggs together until well-combined.
- Mix in the coconut sugar and granulated sugar. Add the vanilla and mix to combine. The dough will be thick and sticky.
- Stir in the oats, baking soda, and salt.
- Fold in the chocolate chips and M&M's candies, saving a few to sprinkle on top if desired.
- Spread the mixture evenly into the prepared baking pan and bake for 20-25 minutes, or until just beginning to brown around the edges.
- Allow the bars to cool to room temperature before cutting into squares.
