Monster Cookie Bars Recipe

These monster cookie bars are filled with chocolate chips, M&Ms, peanut butter, oats, and more for a deliciously filling treat!

Ingredients

  • 1 cup creamy peanut butter
  • 2 large eggs
  • ¼ cup coconut sugar
  • ¼ cup granulated sugar
  • 2 teaspoons pure vanilla extract
  • 1½ cups thick-cut old-fashioned rolled oats
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • ½ cup semisweet chocolate chips
  • ½ cup M&M's candies

Instructions

  1. Preheat oven to 350°F. Line an 8x8-inch baking pan with parchment paper and set aside.
  2. In a medium bowl, using a hand mixer, beat the peanut butter and eggs together until well-combined.
  3. Mix in the coconut sugar and granulated sugar. Add the vanilla and mix to combine. The dough will be thick and sticky.
  4. Stir in the oats, baking soda, and salt.
  5. Fold in the chocolate chips and M&M's candies, saving a few to sprinkle on top if desired.
  6. Spread the mixture evenly into the prepared baking pan and bake for 20-25 minutes, or until just beginning to brown around the edges.
  7. Allow the bars to cool to room temperature before cutting into squares.
