Monster Cookie Energy Balls
Monster Cookie Energy Balls combine creamy peanut butter, honey, oats, protein powder, and mini chocolate chips for a chewy, sweet snack with bursts of chocolate and candy pieces. These no-bake bites hold together due to the sticky peanut butter and honey, offering a convenient energy boost when refrigerated and ready to eat. The addition of protein powder adds substance, making them suitable for quick refueling.
Ingredients
- 1/2 cup peanut butter natural, creamy
- 3 tablespoons honey
- 1 teaspoon vanilla extract
- 1/2 cup rolled oats old fashioned
- 1 protein powder
- Pinch sea salt flaky
- 2 tablespoons mini chocolate chips
- 2 tablespoons mini M&M’s candy
Instructions
- In a medium bowl, combine the peanut butter, honey, and vanilla extract. Stir with a spatula until smooth.
- Add the oats, protein powder, and sea salt; stir until well combined. If the mixture is a little dry, you can add 1 to 2 teaspoons of water. Stir in the chocolate chips and M&M’s.
- Roll the mixture into small balls, about 1 tablespoon per ball. You can also use a cookie scoop to form the balls.
- You can sprinkle the tops with a little flaky sea salt, if desired. Place in an airtight container and keep refrigerated for up to 2 weeks.
Notes
- Use creamy, natural peanut butter for the best texture; add a teaspoon or two of water if the mixture feels too dry.
- Mini chocolate chips and mini M&M’s are ideal, but regular size can be used if needed.
- This recipe can easily be doubled to make a larger batch.
