Monterey Chicken Sandwiches

Easy 20 minute Monterey Chicken Sandwiches with seasoned chicken, bbq sauce, melty jack cheese, bacon, and all the fixin's!

Ingredients

  • 4 hamburger buns or soft sandwich rolls
  • 4 boneless skinless chicken breasts pounded to even thickness
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • salt and pepper to taste
  • ½ cup BBQ sauce
  • 4 slices Colby jack cheese (OR 4 slices mild cheddar cheese and 4 slices mozzarella cheese)
  • 4-8 slices Bacon cooked to preferred crispiness

Instructions

  1. Season chicken breasts with salt and pepper, garlic powder, and chili powder. Grill or cook in a skillet on the stove over medium heat for 4-6 minutes on each side until cooked through.
  2. When chicken is fully cooked, place cheese on top of chicken and allow to melt.
  3. Assemble sandwiches by spreading about 1/4 cup bbq sauce on each bun bottom half, then topping with chicken and cheese, bacon, remanning toppings, and bun top half. Serve immediately.

  • Optional toppings: mayo, tomato, red onion, and romaine lettuce.
