Ingredients

  • 1/4 cup vegetable oil
  • 3/4 cup applesauce
  • 1/2 cup sugar
  • 1/2 cup brown sugar , packed
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon salt
  • 2 cups shredded carrots
  • 1/3 cup walnuts , chopped
  • 1/3 cup raisins
  • 1/3 cup sweetened flaked coconut

Instructions

  1. Preheat oven to 350 degrees and line a 12 muffin tin with muffin liners.
  2. In a large bowl whisk together the vegetable oil, applesauce, sugar, brown sugar, eggs, and vanilla extract.
  3. Sift together the flour, baking soda, cinnamon, and salt.
  4. Whisk the flour mixture into the wet mixture until just combined.
  5. Fold in the carrots, walnuts, raisins, coconuts, and apple.
  6. Bake for 20-22 minutes.
