Ingredients
- 120 g unsalted butter 4.2 oz/ ½ cup, room temperature
- 90 g brown sugar 3.2 oz/ ½ cup
- 65 g crunchy peanut butter 2.3 oz/ ¼ cup, unsweetened
- 1 egg
- 50 g cup flour 1.7 oz/ ⅓ cup + 1 tablespoon
- ½ teaspoon baking powder
- ½ teaspoon cinnamon
- ¼ teaspoon fine sea salt
- 150 g rolled oats 5.3 oz/ 1 ⅔ cup
- 65 g raisins or cranberries or a mixture of the two 2.3 oz/ ⅓ cup
- 50 g chopped walnuts 1.7 oz/ ⅓ cup
Instructions
- Preheat the oven to 180 grad Celsius/350 grad Fahrenheit. Line a baking tray with parchment paper.
- Batter: Cream butter and sugar. Add peanut butter and then the egg. Beat everything together for one more minute.
- Mix and sift the flour, baking powder, cinnamon, and salt and stir into the butter mixture. Add oats, raisins (or cranberries), and walnuts.
- Drop rounded tablespoons of the mixture onto the baking sheet and press lightly with a spoon to form circles.
- Bake for about 15 minutes until lightly colored.
- Let rest on the tray for 5 minutes, transfer to wire racks to cool completely.
- Store in an airtight container.
