Ingredients

  • 10 large eggs
  • 1/2 cup low-fat milk
  • 1/2 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Mozzarella cheese
  • 1 cup turkey sausage chopped
  • 2 green onions chopped
  • 1/4 cup diced yellow onion
  • 1/4 cup diced red bell pepper
  • salt to taste
  • black pepper to taste

  1. Preheat oven to 350°F and grease a 12-cup muffin tin with nonstick spray or oil.
  2. In a large bowl, whisk together the eggs and milk until smooth. Stir in the shredded cheddar and mozzarella cheese, chopped turkey sausage, green onions, yellow onions, bell peppers, salt, and black pepper.
  3. Carefully pour the mixture into the muffin cups, filling them almost to the top. Bake for around 20 minutes or until the eggs are fully set. Allow to cool slightly before removing from the tin.
