Ingredients

  • 2 tablespoons vegetable oil
  • 4 pounds beef eye of round
  • 2 teaspoons kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • 3 tablespoons unsalted butter
  • 1 yellow onion , chopped
  • 8 ounces crimini mushrooms , sliced
  • 3 cloves garlic , minced
  • 2 cups beef broth
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce 
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika

Instructions

  1. Preheat oven to 325 degrees.
  2. Heat oil in a large dutch oven on high heat.
  3. Season chuck roast with salt and pepper.
  4. Brown meat on all sides, 4-5 minutes on each side.
  5. Remove beef from pan.
  6. Add butter, mushrooms, and onions to the pot, cooking for 8-10 minutes until mushrooms are browned and onions are translucent.
  7. Add in garlic, stir and cook for 30 seconds.
  8. Whisk together beef broth, dijon mustard, Worcestershire sauce, thyme, and paprika.
  9. Add beef back into the pot and cover with broth mixture.
  10. Cook, covered, for 3-3 1/2 hours.
  11. Break apart beef and serve.
