Ingredients

  • 2 tablespoons olive oil
  • 1 pound mushroom such as cremini or baby bella, sliced
  • 1 onion diced, medium
  • 2 cloves garlic minced
  • 1/2 teaspoon thyme dried
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 cup mozzarella cheese grated
  • 1/4 cup Parmesan Cheese grated
  • 1/2 cup whole wheat breadcrumb

Instructions

  1. Preheat oven to 350°F. In a large skillet, heat the olive oil over medium heat. Add onions and sauté until translucent, about 5 minutes.
  2. Add garlic and mushrooms, and season with thyme, salt, and pepper. Cook until mushrooms are tender, about 7 minutes.
  3. In a small bowl, combine mozzarella and Parmesan cheese.
  4. Transfer the sautéed mushroom mixture into a greased baking dish.
  5. Sprinkle evenly with the cheese mixture and breadcrumbs.
  6. Bake in the preheated oven for 20 minutes or until the top is golden and bubbly.
