Ingredients

  • 2 tablespoons olive oil
  • 1 pound chicken thighs boneless and skinless, cut in 1-inch pieces
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon salt or to taste
  • ¼ teaspoon pepper or to taste
  • ¼ teaspoon red pepper flakes
  • 4 tablespoons butter unsalted, divided
  • 8 ounces cremini mushrooms sliced
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 2 cloves garlic minced
  • 2 tablespoons fresh parsley chopped

Instructions

    Cup of Yum
  1. Cook the chicken: Heat the olive oil in a large skillet over medium-high heat. Add the chicken thigh pieces and season with the Italian seasoning, salt, pepper and red pepper flakes. Stir and cook for about 5 to 6 minutes until the chicken browns and is cooked through. Transfer the chicken to a plate and set aside.
  2. Cook the mushrooms: Add 2 tablespoons of the butter to the same skillet and melt. Add the sliced mushrooms then season with onion and garlic powder. Stir and cook for about 4 minutes or until the mushrooms start to brown.
  3. Finish the dish: Add the chicken back to the skillet along with any juices released in the plate. Add remaining 2 tablespoons of butter and minced garlic. Stir everything together and cook for 1 to 2 more minutes. Taste for salt and pepper and adjust as necessary. Remove from heat and garnish with parsley. Serve warm.

Notes

  • If you're really short on time, pick up a rotisserie cooked chicken instead of cooking your own.
  • Mushrooms need to be cleaned. You can use the dry method of brushing them or wiping them with a cloth. If you choose to wash them with water, they should be dried as much as possible, since they act like sponges, but either method will work.
  • Place any leftovers in an airtight container for up to 3-4 days. It heats up wonderfully either in the microwave or on the stovetop.
  • Once thoroughly cooled, place the chicken and mushroom mixture in an airtight container or, freezer-safe bag and store in the freezer for up to 4 months. When thawed, heat through and serve with your side dish.
