Ingredients

  • 16 ounces white mushroom finely diced, fresh
  • red onion finely diced, small
  • 2 jalapeños finely diced
  • 1 cup cilantro chopped
  • 3/4 cup lime juice ~5 limes, freshly squeezed
  • 1 tablespoon olive oil
  • kosher salt to taste

Instructions

  1. In a bowl combine the mushrooms, onion, jalapeno and cilantro. Add the lime juice and olive oil and toss gently. Salt to taste
  2. Let sit for a couple of hours allowing the flavors to meld. This salsa is best served at room temperature.
  3. Serve as a topping for fish, chicken, grilled steak, or as an appetizer with a basket of your favorite chips.
