Nature Chick Granola

Here's your all-natural granola with all of the healthy good stuff that will keep you energized.

Ingredients

  • 3 1/2 cups rolled oats
  • 1/2 cup unsweetened coconut flakes
  • 1/2 cup Almonds or Hazelnuts chopped
  • 1/4 cup sunflower seeds or other seed such as Chia, Sesame or Pepitas
  • 1/2 cup honey
  • 1/3 cup pure maple syrup
  • 1/4 cup fresh squeezed orange juice or pure OJ from the store
  • 1/3 cup coconut oil melted
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 - 1 teaspoon sea salt
  • 1 cup dried apricots chopped
  • 1/2 cup dried cherries or cranberries
  • * Pumpkin Pie spice is excellent in granola. Optional add 1 teaspoon

Instructions

  1. Preheat oven to 300 degrees.
  2. Place oats, coconut, nuts, and seeds in large bowl. Pour in honey, maple syrup, orange juice, coconut oil, vanilla, cinnamon and salt and stir until all coated. Toss in dried apricots and cherries.
  3. Pour on a lightly greased cookie sheet or covered with a Silpat or parchment paper.
  4. Bake for 35 - 45 minutes, stirring every 15 minutes until lightly golden brown.
  5. Place in glass jars or air-tight containers. Granola will last for weeks. You can also freeze it in plastic freezer bags.
  6. Use it top Greek yogurt, acai bowls or just eat it all by itself as a snack.
