Navy Bean and Ham Soup

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 medium onion (diced)
  • 2 large carrot peeled and diced
  • 3 talks celery (diced)
  • 1 teaspoon thyme
  • 1 bay leaf
  • salt to taste
  • black pepper to taste
  • 8 cups chicken broth store-bought or homemade, low-sodium
  • 12 ounces smoked ham cut in cubes, cooked
  • 14 ounces Navy beans (drained and rinsed)
  • oyster crackers (optional, to serve)

Instructions

  1. Heat oil in a large soup pot over medium-high heat. Add onion, carrot and celery plus a pinch of salt and pepper. Saute until veggies start to soften, about 5-6 minutes, stirring frequently.
  2. Add bay leaf, thyme and chicken broth to pan then bring to a boil. Stir in cubed ham and beans then bring to a boil again. Reduce to low and simmer for 30 minutes. Remove bay leaf. Check for seasoning and adjust accordingly before serving. Top with oyster crackers if you wish.
