Ingredients

  • 4 eggs
  • 1 teaspoon butter (use margarine as a dairy-free option)
  • 1 small onion (or shallot)
  • 4 bacon rashers
  • 2 tablespoon heavy cream use creme fraiche, milk or a plant-based creamer in leue of heavy cream.
  • salt (two pinches or more, to taste)
  • black pepper (two pinches or more, to taste)
  • 3 tablespoon shredded cheese (mozarella, cheddar, or any easy-melting variety)
  • a small bunch of fresh chives or your favorite herbs - optional (to garnish)

Instructions

    Cup of Yum
  1. Dice the onion and chives and set aside. In a small bowl and using a fork, beat the eggs and salt. Lay the bacon strips on the pot of your Ninja Foodi, set it to saute for 5 minutes, and fry the bacon on each side until properly browned. Use a pair of kitchen tongs to flip from time to time. You can also fry your bacon on the stovetop, using a skillet.
  2. Using the same pot fry the onion until translucent. Feel free to add a teaspoon of butter or oil, if the pot or skillet feels too dry. Set aside.
  3. Next, add the diced onion, chives (set aside two tablespoons as garnish), and heavy cream to the bowl with the beaten egg. Whisk using a fork to combine.
  4. Grease an air frying 8-inch (20cm) pan or cake tin with butter or oil and set the temperature to 325°F (162°C).
  5. Pour the egg mixture into the air frying pan or cake tin, top with any remaining butter, and then use an aluminum sling to carefully lower the pan or cake tin inside the air fryer basket. You only need the sling if you do not own an air frying pan.
  6. Cook four eggs for 12-15 minutes or 8-10 minutes for two to three eggs. Open the air fryer halfway through cooking, place the bacon pieces on top, and sprinkle with black pepper and shredded cheese. Cook until the time is up or until the omelette has a golden color and is totally set. Once cooked, use a spatula to slide the omelette out of the pan onto a plate. Serve immediately.

Notes

  • black pepper tends to sink to the bottom and not properly mix in with the eggs resulting in a not so pleasant looking omelette. It is, therefore, better to sprinkle it towards the end of cooking or when serving.
  • do not overstuff your omelette, the filling should just be enough for you to still taste the eggs.
  • do not set your air fryer to cook at too high a temperature, as this will make your omelette rubbery.
