No Bake Chocolate Chip Cookie Dough Cheesecake Recipe

Ingredients

  • 12 Chocolate Chip Cookies
  • 2 tablespoons butter
  • (2) 8 oz. packages of cream cheese softened at room temperature
  • 1/2 cup heavy whipping cream
  • 2 teaspoons vanilla extract
  • 2/3 cup brown sugar
  • 3/4 cup mini chocolate chips
  • 12 Mini chocolate chip cookies or larger cookies cut into pieces for serving

Instructions

  1. In food processor blend together the chocolate chip cookies with the butter creating your cookie dough crust. Press a tablespoon and a half of the mixture into each serving jar. Press the mixture so it's firm in the bottom of each jar to make the crust.
  2. Using a mixer with the whisk attachment, whip the cream cheese until it's smooth.
  3. Add in the brown sugar and mix until it's well blended, then add the vanilla extract and heavy whipping cream. Whip until fluffy and light.
  4. Stir in 1/2 cup of the mini chocolate chips.
  5. Spoon the cream cheese mixture into the jars over the cookie crust.
  6. Top the jars with the remaining chocolate chips and a small cookie.
  7. Refrigerate for at least 1 hour before serving and then enjoy!

Notes

  • This recipe combines two of my favorite things...cookies and cheesecake.
