No Bake Chocolate Energy Bars

These healthy no bake chocolate energy bars are easy to make with only 8 simple ingredients. They're low-sugar, vegan, gluten-free and perfect for meal prep.

Ingredients

  • 2 cups rolled oats old fashioned
  • ½ cup peanut butter creamy
  • ½ cup almond milk unsweetened
  • ¼ cup maple syrup
  • 2 Tablespoons cocoa powder
  • ½ teaspoon vanilla extract
  • ⅙ teaspoon salt sea salt
  • 3 Tablespoons coconut plus more for topping, unsweetened, shredded

Instructions

  1. Grease an 8x8 square glass baking dish with coconut oil or line with parchment paper.
  2. Combine oats and shredded coconut in a mixing bowl and set aside.
  3. Combine peanut butter, almond milk, maple syrup and cocoa powder in a saucepan. Cook on medium heat while stirring the mixture until well combined. Heat until mixture is fragrant and thickened, about 5 minutes or so. Turn off stove top and stir vanilla and sea salt.
  4. Pour mixture over the oats and shredded coconut and mix until well combined.
  5. Pour batter into the prepared baking dish and press down until the batter is evenly distributed across the dish. Sprinkle with extra coconut, press down once more so the coconut sticks.
  6. Place dish into the fridge and let sit until the bars are set up (about 2 hours). Remove from fridge, cut into bars and enjoy. Store any leftovers in the fridge.
