No-Bake Chocolate Satin Kahlua Pie

This easy no-bake chocolate satin pie is soft and silky, similar to a chocolate mousse, not too sweet, and spiked with a hint of Kahlua.

Ingredients

Chocolate Cookie Pie Crust:
  • 30 chocolate cookie wafers such as Nabisco Famous Chocolate Wafers
  • 5 tablespoons unsalted butter softened
Filling:
  • 1 can evaporated milk 12-ounce
  • 2 large egg yolks
  • 2 tablespoons Kahlúa
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 2 cups semi-sweet chocolate morsels 12-ounce package
Topping Options:
  • Rompope Mexican eggnog
  • pomegranate seeds
  • raspberries

Instructions

  1. For the Pie Crust:
  2. Place cookies in a food processor and process until the pieces are about the size of peas. Stop the food processor, add the melted butter, and continue to process until the crumbs are fine.
  3. Pour crumb mixture into a 9-inch pie plate and, using your fingers, press firmly and evenly into the bottom and up the sides.
  4. For the Filling:
  5. Whisk together evaporated milk and egg yolks in a medium saucepan. Heat over medium-low heat, stirring constantly until mixture is very hot and thickens slightly; do not boil. Remove from heat; stir in Kahlua, cinnamon, vanilla, and chocolate morsels until completely melted and the mixture is smooth.
  6. Pour into crust; refrigerate for 3 hours or until firm. Top with your toppings of choice.

Notes

  • You could use any other cream based liqueur for this recipe.
