No Bake Energy Bites

No Bake Energy Bites are packed with protein and make the perfect healthy snack or breakfast on the go!  Loaded with oats, flax seed, peanut butter, coconut and chocolate chips, these little bites are amazing!

Ingredients

  • 1 cup old-fashioned rolled oats
  • ⅓ cup coconut flakes
  • ½ cup nut butter I used natural peanut butter
  • ½ cup ground flax seed
  • ½ cup chocolate chips optional
  • ⅓ cup honey
  • 1 teaspoon vanilla extract

Instructions

  1. In a large mixing bowl, combine 1 cup old-fashioned rolled oats, ⅓ cup coconut flakes, ½ cup nut butter, ½ cup ground flax seed, ⅓ cup honey, and 1 teaspoon vanilla extract. Mix well to form the dough.
  2. Stir in ½ cup chocolate chips or other desired mix-ins, if using.
  3. Chill the mixture in the fridge for 30 minutes so that the balls will bind together.
  4. Roll into 1 ½ inch balls and store in the refrigerator in an airtight container.
