No-Bake Oats and Chocolate Protein Bites

Ingredients

  • ** Refer to the second photo in this post to see branded products that I use.
  • 2 c. quick oats use gluten-free if you like
  • ½ c. vanilla protein powder I use VeganMax Vanilla from Life Time Fitness
  • ½ c. mini chocolate chips
  • ½ tsp. cinnamon
  • 1 c. salted almond butter I use Trader Joe's
  • ⅔ c. raw organic honey I use Trader Joe's
  • 2 T. melted Organic Coconut oil I use Trader Joe's

Instructions

    Cup of Yum
  1. In a medium/large bowl, combine all dry ingredients.
  2. Add almond butter, honey, and coconut oil to dry ingredients. Stir with a wooden spoon to evenly incorporate.
  3. Shape mixture into balls about 1-1/4" in diameter. I like to use a 1-1/4" cookie scoop, packing the mixture as tightly as I can, and then rolling the dough in my hands to finish.
  4. Store in an airtight container at room temperature for up to a week. I find that it helps to lightly press a piece of plastic wrap over the bites to retain moisture. These also freeze very well, for longer storage.
