No Bake Pumpkin Protein Bites

Real pumpkin with protein packed ingredients including oats. These mix up in minutes for a perfect snack any time of day.

Ingredients

  • 1 1/2 cups old-fashioned oats uncooked (I used gluten-free)
  • 1 1/2 vanilla whey protein powder this equates to three scoops of the brand I use, servings
  • 1 1/2 teaspoon pumpkin pie spice
  • 1/3 cup honey plus 1 tablespoon
  • 1/3 cup nut butter I used peanut
  • 1/3 cup pumpkin puree

Instructions

    Cup of Yum
  1. Mix together oats, protein powder, pumpkin pie spice and set aside.
  2. In a separate bowl, add honey and nut butter and microwave for 30 seconds. Mix in the pumpkin to the honey and nut butter mixture and let cool slightly.
  3. Add honey and peanut butter mixture to the oats mixture and mix well forming one dough ball. Put in the refrigerator for 15-20 minutes.
  4. Form into 1 inch balls. Put in airtight container and store in the refrigerator.
