No-Bake S'mores Protein Cheesecake Cups

Ingredients

Chocolate Cheesecake Layer
  • 1/2 cup Dannon Light and Fit Vanilla Greek yogurt
  • 1/4 cup 1/3 less fat cream cheese
  • 1/4 cup plain non-fat Greek yogurt
  • 1/2 scoop Cellucor chocolate casein protein powder
  • 1 tbsp dutch cocoa
  • 1/2 tsp vanilla extract
Marshmallow Cheesecake Layer
  • 1/4 cup Dannon Light and Fit Vanilla Greek yogurt
  • 1/4 cup 1/3 less fat cream cheese
  • 1/4 cup plain non-fat Greek yogurt
  • 1/4 cup marshmallow fluff
  • 1/2 tsp marshmallow extract
  • 1/2 scoop Cellucor Vanilla Casein Protein powder
Crust
  • 2 Fat Free Honeymaid Graham Crackers crushed
  • 2 tsp melted ghee
  • 1/8 tsp cinnamon

Instructions

  1. Mix graham crackers with melted ghee and cinnamon.  Push into the bottom of 4 serving glasses.  Set aside.
  2. In a medium bowl, combine chocolate cheesecake layer ingredients with a hand mixer until smooth.  Layer half of the mixture on top of the crust in the serving glasses.  You can use a piping bag to make this process cleaner and easier.
  3. In a medium bowl, combine marshmallow cheesecake layer ingredients with a hand mixer until smooth.  Layer on top of chocolate cheesecake layer.
  4. Add remaining chocolate cheesecake mixture on top of marshmallow cheesecake layer.
  5. If desired, top with additional marshmallow fluff and toast with a kitchen torch.  Add additional graham cracker crumbs and chocolate shavings as desired.
