No Bake Strawberry Cheesecake Parfaits
A delicious and healthier parfait, perfect for Valentine's Day or any special dessert!
Ingredients
- 2 cups strawberry diced
- 1 teaspoon sugar
- 12 ounces Greek yogurt plain, non-fat
- 6 ounces cream cheese room temperature, low fat
- 1 teaspoon vanilla extract
- 1/2 cup powdered sugar
Instructions
- In a small bowl mix the diced strawberries and teaspoon of sugar, place in the fridge to macerate and chill.
- In the bowl of a stand mixer add the room temperature cream cheese and beat for several minutes until fluffy. Add the Greek yogurt, vanilla, powdered sugar to the cream cheese and beat on medium speed until the mixture is smooth and creamy.
- In 4 glasses, layer the strawberries and cheesecake, ending with the strawberries on top. Chill in the fridge for at least 30 minutes.
Notes
- The strawberry shortcake vodka is optional, but adds a great strawberry flavor to the cheesecake mixture.
- If you don't have a stand mixer a hand held mixer will work as well.
