No Bake Vegan Snickerdoodle Bites

No Bake Vegan Snickerdoodle Bites mix almond butter, maple syrup, and flours into a soft dough coated in cinnamon and sugar. These vegan bites have a chewy texture with the classic cinnamon-sugar taste of snickerdoodles but without baking. Their small, rolled shape makes them convenient for snacking or dessert without heat or oven time.

Ingredients

  • 2 tbsp almond butter or use peanut butter(it has stronger flavor, smooth
  • 3 tbsp maple syrup
  • 3/4 cup almond flour
  • 1/2 cup oat flour or 3 tbsp coconut flour to keep it grain free
  • salt good pinch
  • 1 tbsp cane sugar optional but great for texture, or coconut sugar
  • 1/2 tsp cinnamon
For rolling --
  • 1 tsp cinnamon
  • 1 tbsp cane sugar or coconut sugar

Instructions

  1. Warm the maple syrup(in a saucepan or microwave) and add to a bowl. mix in the almond butter and maple syrup until well combined.
  2. Add in the rest of the ingredients mix with a spatula to turn everthing into a dough. It will take a minute to come together. If the mixture is too dry, add more maple syrup 1 tsp at a time
  3. In another small bowl, mix the cinnamon and sugar for coating.
  4. Take small balls out of the dough using a teaspoon and roll into a ball, then roll the ball in the cinnamon sugar mixture
  5. Repeat for all of the remaining dough. Store on the counter for upto 2 days or refrigerate for upto 2-3 weeks

Notes

  • Store these bites refrigerated for up to 2-3 weeks, or freeze for up to a month to maintain freshness.
  • Rolling in maple sugar or ground nuts instead of cane sugar can vary texture and reduce sugar content.
  • Adding spices like ground ginger, cloves, allspice, and molasses creates a gingerbread version of these bites.
  • Using room temperature nut butter eases mixing with maple syrup for a smoother dough.
  • Incorporating chia or hemp seeds adds crunch and boosts protein content.
