Ingredients

  • 3 tablespoons olive oil
  • 1/2 lb ground turkey 93% lean
  • 1 medium yellow onion diced
  • 2 cloves garlic minced
  • 2 medium carrot diced
  • 2 talks celery diced
  • 2 small zucchini diced
  • 2 small yellow squash diced
  • salt to taste
  • black pepper to taste
  • 1 cup beef stock or chicken stock
  • 14.5 oz diced tomatoes 1 can
  • 14.5 oz tomato sauce 1 can
  • 1 1/4 cup corn frozen
  • 1 tablespoon cumin
  • 1 tablespoon chili powder or more if you like it spicy
toppings:
  • cheddar cheese grated
  • cilantro chopped
  • sour cream
  • avocado etc

Instructions

  1. In a large pot, heat oil over medium heat. Drop meat into the pot and break apart using a wooden spoon. Cook until meat is cooked thoroughly.
  2. Add in onions, garlic, carrots, celery, zucchini, and squash until slightly softened, 5 minutes. Stir in the remaining ingredients and bring to boil. Reduce heat to low and simmer at least 30 minutes.
  3. Serve with desired toppings and cornbread.

Notes

  • LOWER CARB OPTION: If you'd like to make this recipe even lower in carbs, consider omitting the corn.
