No-chocolate sweet potato waffles with no-chocolate sauce
Enjoy these chocolate waffles with chocolate sauce without any cocoa! How? Just use carob. The other ingredients are sweet potato, cassava, tapioca, coconut sugar and maple syrup. Completely Medical Medium, AIP paleo and vegan friendly!

Ingredients
- ½ cup sweet potato pre-roasted or cooked and mashed, measured tightly packed
- 2 tbsp baking powder (corn + aluminum free)
- 1½ tbsp cream of tartar
- ⅛ cup maple syrup
- ⅛ cup carob
- + ½ + ½ tbsp baking soda
- 1 tsp carob best added by ¼ tsp at a time
- ⅛ cup cassava flour
- ⅛ cup tapioca
- ¼ cup coconut flower sugar
Instructions
- Warm up your waffle iron.
- Mix the cassava, tapioca, carob and sugar.
- Mash in the sweet potato with a fork, until you can form a very thick batter, almost a dough.
- Make two batter/dough balls. I used a spoon. Scoop them into your iron.
- Cook for 8 minutes (or 9 to 10 for a bit crispier).
- In the meantime whisk in the carob to a small bowl of maple syrup. It's best to do that with a small dose at the time.
- Serve the waffles on a plate and drizzle the sauce on top.
