Ingredients

  • cooking spray nonstick
  • 1 pound ground pork sausage
  • 1 onion diced, medium
  • 32 ounces hash browns thawed, frozen
  • 2 cups cheddar cheese shredded
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F and grease a 9x13-inch baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, cook the sausage and onion until the sausage is browned and the onions are translucent. Drain any excess grease.
  3. In a large bowl, combine the cooked sausage and onions with the thawed hash browns, 1 cup of cheddar cheese, salt, and pepper.
  4. Transfer the mixture to the prepared baking dish, spreading it evenly.
  5. Sprinkle the remaining 1 cup of cheddar cheese over the top of the casserole.
  6. Bake in the preheated oven for 45 minutes, or until the casserole is heated through and the cheese is melted and slightly golden.
