No Knead Cranberry Nut Bread

No Knead Cranberry Nut Bread combines dried cranberries and chopped pecans in a no-knead bread dough. The method involves mixing the simple ingredients and allowing the dough to rise slowly for at least 8 hours, resulting in a bread with a chewy crumb and lightly golden crust. Baking takes place in a preheated Dutch oven to create steam and enhance crust texture. This loaf offers a subtle tartness from cranberries complemented by nutty crunch, making it suitable for snacking or breakfast.

Ingredients

  • 4 ⅓ cups bread flour
  • 1 ½ teaspoons salt
  • 1/2 teaspoon instant yeast
  • 2 cups water about 80F, lukewarm
  • 1 cup dried cranberries
  • 3/4 cup pecans or walnuts, coarsely chopped

Instructions

    Cup of Yum
  1. In a large bowl1, stir the flour, salt, yeast, and water together in a large bowl. The dough will be shaggy, but be sure to incorporate all of the flour.
  2. Fold in the dried cranberries and chopped nuts.
  3. Cover the bowl with plastic wrap.
  4. Let the dough sit at room temperature for at least 8 hours.2
  5. Turn the dough out onto a floured movable surface. I like to use either a silicone baking mat or a piece of parchment paper.
  6. Lightly cover the dough with greased plastic wrap.
  7. Place a Dutch oven with lid3 in the oven and preheat to 450F.
  8. Once the oven reaches 450F, continue to heat the Dutch oven for 30 minutes.
  9. Carefully take the Dutch oven out, uncover the dough, and turn the dough into the Dutch oven.
  10. Cover and bake for 30 minutes.
  11. Remove the lid and continue to bake for 5 minutes, or until light golden brown.
  12. Let the bread cool in the pot to room temperature.

Notes

  • Use a large enough bowl for dough expansion during the rise.
  • The dough can proof up to 48 hours for a tangier flavor.
  • Ensure your Dutch oven and lid are oven-safe with suitable handles.
  • Cool bread completely in the Dutch oven before slicing to set texture.
