No Sugar Lemon Chia Fresca is a refreshing beverage combining water, lemon juice, chia seeds, liquid sweetener such as stevia or maple syrup, and cayenne pepper. After resting in the fridge to allow chia seeds to gel, it offers a slightly tangy, textured drink with subtle heat and delicate sweetness, suitable for hydration or a light refreshment.
Ingredients
- 12 ounces water cold
- 2 Tablespoons lemon juice 1/4 cup
- 2-3 teaspoons chia seeds
- 5-6 drops stevia or 2 teaspoons maple syrup, liquid form
- 1 pinch cayenne pepper
Instructions
- Combine all ingredients in a glass and let sit for about 15 minutes in the fridge so the chia seeds have a chance to absorb some of the liquid and โgelโ up. Enjoy immediately or save for later. Can be made ahead of time as the mixture should last at least 2-3 days in the fridge.
Notes
- Coconut water can be used instead of plain water to add potassium and magnesium to the drink.
- Let the drink rest in the fridge about 15 minutes to allow chia seeds to swell and gel properly.
- This beverage can be made ahead and stored in the refrigerator for 2-3 days without losing texture.
