Ingredients

  • 1 cup pineapple chunks fresh or frozen
  • 1 banana medium to large, ripe
  • ½ cup almond milk unsweetened vanilla
  • ½ teaspoon coconut extract or to taste
  • sweetener optional and to taste**
  • coconut optional and to taste, about 1/4 cup, shredded
  • rum optional, splash, or Malibu Coconut Rum
  • maraschino cherries optional, for garnishing

Instructions

    Cup of Yum
  1. Combine pineapple, banana, milk, coconut extract, and optional sweetener in a blender and blend until smooth and creamy.
  2. Optionally add rum, to taste, and blend. (Intended for those for whom alcohol consumption is appropriate; always drink responsibly)
  3. Optionally garnish and serve immediately. Leftover portion may be frozen for up to 2 months.

Notes

  • One 8-ounce can of crushed pineapple (in juice) can be used as a substitute for fresh or frozen pineapple chunks.
  • To maintain a lower-calorie option, use no-calorie sweeteners such as liquid vanilla stevia drops, white stevia powder, or Splenda as desired.
  • Serve immediately for best texture; leftovers can be frozen up to 2 months preserving flavor.
